Smoked Short Rib Sammie

Absolutely delicious smoked short rib sandwich. Topped with a sweet & spicy jalapeno-pineapple coleslaw, and red pickled onions. Sandwiched perfectly between artesano style buns.

Ingredients

SHORT RIBS

PINEAPPLE JALAPENO COLESLAW

  • 1/2 head of cabbage

  • 1 jalapeno chopped

  • 6 oz. can crushed pineapple

  • pickled red onions

  • coleslaw dressing (brand of choice)

Instructions

HOW TO: SHORT RIBS

  1. set smoker to 275 degrees

  2. season short ribs with blazing star beef rub

  3. smoke for roughly 3 hours

  4. remove from smoker and wrap short ribs in foil leaving the top open so that you can pour 1/2 cup of beef broth inside foil with the short ribs

  5. close the foil over the short ribs and put back on the smoker until internal temp reaches 205 degrees

  6. remove short ribs from smoker and shred with forks

  7. cover shredded short ribs in BBQ sauce, stir until coated

  8. place shredded short ribs on top of bun, top with coleslaw, and pickled red onions

HOW TO: COLE SLAW

  1. roughly chop 1/2 head of cabbage

  2. dice 1 jalapeno

  3. drain can of crushed pineapple

  4. combine all ingredients

  5. pour desired amount of coleslaw dressing on and mix together

Notes

  • If you don't have the specific rubs or sauces that we recommend don't sweat it, use your favorites & maybe you can try ours out next time!

  • Sometimes just don't have the time to do it all homemade or have all of the necessary ingredients & that's what happened here so we went with a marie calendars store bought coleslaw dressing that we already had & it worked out great!
