Delicious Smoked Mac
This elevated smoked mac makes for an amazing side dish or even a main for your next gathering. It’s easy to make and absolutely delicious
Ingredients
What Ya Need:
1 lb. elbow macaroni noodles
8 tbsp. butter
4 tbsp. flour
1tbsp. mustard powder
2 cups half and half
8 oz. smoked Wisconsin cheddar
8 oz. creamy Gouda
4 oz. cheddar Gruyère with black truffle
6 strips chopped bacon
Instructions
How To:
Set smoker to 225 degrees
Chop 6 strips of bacon and cook to preference
Dice all cheese into large cubes for easier melting
Cook the macaroni noodles until they are al dente (For authentic "al dente" pasta, boil uncovered, stirring occasionally for 7 minutes)
Heat a 12-inch cast iron skillet over medium heat. Melt 8 Tbsp of butter. Once melted whisk in 4 tbsp of flour until a smooth, thin paste forms. Whisk in 1tbsp. mustard powder
Carefully pour in 2 cups of half and half and bring the sauce to a boil while continuously whisking. Reduce heat to low and whisk in the cubed cheeses a little at a time
Turn off the heat and pour in the macaroni noodles. Stir gently until the noodles are coated with the cheese sauce.
Add in the chopped cooked bacon to macaroni noodles
Place the skillet in the smoker and smoke at 225 degrees for approximately 1 hour. You can smoke for up to 2 hours if you prefer a stronger smoke flavor, but the noodles will take on quite a bit of smoke
Remove from smoker & top with bread crumbs if you choose! Enjoy this delicious, cheesy, smokey mac!
Notes
The cheeses we used were all found at our local grocery store! Feel free to experiment with any cheddar or gouda cheese that your local store carries or that sound good to you!
