Smoked Beef Jerky

Delicious homemade smoked beef jerky made easy!

Ingredients

What ya Need:

  • Beef Loin New York (shabu shabu) precut slices (costco)

  • 1 cup packed brown sugar

  • 1 cup soy sauce

  • 3 tbsp. worcestershire sauce

  • 1 tbsp. smoked paprika

  • 1 tsp. blazing star beef rub

  • 1 tsp. baking soda

  • 1 tsp. ground black pepper

  • 1 tsp. red pepper flakes

  • 1 tsp. onion powder

  • 1/2 tsp. garlic powder

Instructions

What to Do:

  1. combine all ingredients in a medium bowl and whisk until combined.

  2. add the pre cut meat to the marinade & evenly coat all sides of the meat

  3. place meat and marinade inside a ziploc bag and let marinate for 12 hours

  4. set smoker to the lowest setting (ours is 180 degrees)

  5. place marinated meat slices onto smoker spaced evenly

  6. start checking meat around 2-2.5 hours (ours smoked for a total of 3 hours)

  7. time will depend on the thickness of the meat & what temperature you're smoking at

  8. to check for doneness, remove meat from smoker and let it cool to room temp

  9. meat should be dry to the touch, look like leather, be chewy & still somewhat tender

  10. enjoy!

Notes

  • Costco: We get our pre cut New york (shabu shabu) from Costco.

  • Rubs: If you don’t have the exact rubs we like to use don’t sweat it. We used blazing star beef rub but you can use any beef rub you prefer.

  • Spicy: Make it as spicy as you’d like by adding more red pepper flakes!

  • Trim the Fat: Trim any visible fat from the meat before smoking to prevent spoilage and ensure even drying.

  • Uniform Thickness: Aim for slices that are about 1/4 inch thick to ensure even drying.

  • Freeze Slightly: If you’d like you can place the meat in the freezer for 1-2 hours before slicing to make it easier to cut.

  • Slice Against the Grain: For a more tender jerky, slice against the grain. For a more chewy texture, slice with the grain.

  • Check for Doneness: The jerky is done when it bends and cracks but doesn’t break in half.
